those great VIDALIA Onions are in season!
Those are the onions that are from Vidalia, Georgia;
they are only in season for a few weeks in May & June;
and they are the sweetest of onions.
So sweet you can eat them raw, chopped up in salads.
Another way to eat Vidalia Onions is to go "Internationale":
SWISS CHEESE and VIDALIA ONION PIE
----------------------------------
1 large Vidalia onion, chopped 1/2 lb shredded Swiss cheese
1 pastry for a 9 inch pie crust 3 eggs
1 pat of butter 1 cup half & half
1 tbsp flour 1 tsp salt
- PREPARE and rollout pie crust pastry and line
one 9 inch pie plate with it.
- FRY the Vidalia onion in the butter until tender.
Spread it in the pie shell.
- PREHEAT oven to 400 degrees F.
- TOSS flour with the Swiss cheese in a bowl.
Sprinkle it over the Vidalia onion in the pie shell.
- BEAT the eggs with the half&half in a bowl.
Pour this in the pie shell.
- BAKE 10 minutes.
- TURN DOWN oven to 325 degrees F and
bake for 30 to 35 minutes longer until
a toothpick inserted in the center comes out clean.
- Let pie stand for 10 minutes before cutting into
wedges and serving.

Well the Micronesians are able to "Catch the Wave"
without technical supports (unlike the Westerners).
