  23.     those great VIDALIA Onions are in season!

  25.     Those are the onions that are from Vidalia, Georgia;
  26.     they are only in season for a few weeks in May & June;
  27.     and they are the sweetest of onions.
  28.     So sweet you can eat them raw, chopped up in salads.

  30.     Another way to eat Vidalia Onions is to go "Internationale":

  32.     SWISS CHEESE and VIDALIA ONION PIE

  34.         1 large Vidalia onion, chopped        1/2 lb shredded Swiss cheese
  35.     1 pastry for a 9 inch pie crust         3 eggs
  36.     1 pat of butter                         1 cup half & half       
  37.     1 tbsp flour                            1 tsp salt
  38.  
  39.     - PREPARE and rollout pie crust pastry and line
  40.       one 9 inch pie plate with it.
  41.     - FRY the Vidalia onion in the butter until tender.
  42.           Spread it in the pie shell.
  43.     - PREHEAT oven to 400 degrees F.
  44.     - TOSS flour with the Swiss cheese in a bowl.
  45.           Sprinkle it over the Vidalia onion in the pie shell.
  46.     - BEAT the eggs with the half&half in a bowl.
  47.       Pour this in the pie shell.
  48.     - BAKE 10 minutes.
  49.     - TURN DOWN oven to 325 degrees F and
  50.       bake for 30 to 35 minutes longer until
  51.       a toothpick inserted in the center comes out clean.
  52.     - Let pie stand for 10 minutes before cutting into
  53.       wedges and serving.
